Happy Thanksgiving, everyone.

My office's adopted turkey. Please do consider having a compassionate holiday.

I am about to catch a train and spend the next four days with [livejournal.com profile] jaydk and her mom, where we'll be having a relaxing weekend (I bought the Veronica Mars season 1 DVD in preparation). I'll be back next week.

Vegan Holiday Cookies

Here is a post all about vegan cookies. Enjoy! Please let me know if you bake any of these and how they turn out.

This is something of a sequel to a previous post on how to make vegan pies and cakes.

This is interesting. I forget how I clicked to it.

I'm a zombie today. Was up late last night baking more cookies -- anise rum. Yummy. (Basically the sugar cookie recipe with anise, cloves, and dark rum added. And I tried two icings, both with anise, one with rum and cloves, the other with maple syrup and cinnamon. Both good.)

In other news, it turns out that it's very difficult to find holiday-shaped cookie cutters in NYC at 9pm on a weeknight shortly before Christmas. I spent two hours hitting every imaginable store for blocks. I found heart shapes, butterfly shapes, and bear shapes, but no stars or bells or candy canes or snowflakes or anything remotely holiday-ish. I would've even settled for some goth-type Halloween shapes, but nothing was to be found. Oh, well... my office will just have to deal with plain circle-shaped cookies.

Oh, and if you were wondering about vegan cookies, here's a recipe for butter cookies:

  • 2 sticks of vegan margarine (Willow Run makes soy margarine, and I believe that Fleischman's Unsalted is also vegan)

  • 1 1/2 cups powdered vegan sugar (you can buy this--Hain makes a version--or make it yourself by combining 1 cup unrefined sugar [sucanat, sugar in the raw, etc.] and 4 T. cornstarch and blending in blender until powdery)

  • 1 tsp. vanilla

  • 1 vegan egg (you can use commercial egg replacer, or make your own by mixing 2 T flour, 2 T water, 1/2 T. corn oil, 1 tsp baking powder)

  • 2 1/2 c. unbleached white flour

  • 1 1/2 tsp. baking soda

  • 1 1/2 tsp. cream of tartar

  • 1/4 tsp salt

Cream butter. Add powdered sugar, cream until light and fluffy.

Add egg and vanilla, mix.

Sift together the dry ingredients. Slowly blend into the wet mix until you have dough.

Roll out the dough; cut it into pretty shapes. (Or use an upside-down glass for round shapes.)

Bake for 8 minutes at 400 degrees.


These are fine on their own, or you can make icing.

(Sorry I can't give exact proportions, I just mixed these together until I got the right consistency and a good taste)

Vanilla icing
Mix about 1 cup powdered vegan sugar, 1 - 3 T of vegan margarine, vanilla to taste, maple syrup.

Lemon icing
Mix about 1 cup powdered vegan sugar, 1 - 3 T of vegan margarine, juice and grated rind of a lemon

Spread onto cookies after they cool; sprinkle with vegan sprinklies or other decorations if desired.

Recipes, mostly

I had a nice Thanksgiving. My coworker and his girlfriend held a vegan Thanksgiving at their place. [livejournal.com profile] drujan came with me, and several of my coworker's friends were there as well. The meal was at about 6, and then we hung out chatting and drinking coffee/eating desserts until around 1:30 am. It was fun.

My coworker and his girlfriend cooked everything from scratch. I thought it turned out really well; they even made a homemade tofu turkey, which was about a million times better than the storebought types. Even [livejournal.com profile] drujan liked it, and she was very skeptical of the whole vegan thing. And everything else was great--salad, stuffing, cranberry sauce, gravy, veggies, etc. I brought desserts: two pies (pecan and shoofly) and brownies. I was happy with how they turned out; the pecan was particularly popular.

The weekend was less fun; I visited my parents. But I'm repressing, so not going to talk about that.

[livejournal.com profile] claudia_yvr asked for my vegan pecan pie recipe a while ago, but I'm just now getting to it. Sorry for being so slow. (I'm also anywhere from a couple weeks to several months behind on my email, btw. If you're waiting for a response from me on something, don't worry, it's not personal, just me being slow, and I'm sorry.)
